With winter’s colder temperatures and shorter days, it’s a great time to hunker down with a nice, hot bowl of soup. Enjoy this delicious, nutritious and satisfying meal.
1T. olive oil
1 onion chopped
2 cloves garlic
5 large roma tomatoes
2 c. green chiles, chopped
2 c. black beans
6 c. chicken broth
1 c. cut up chicken
2 T. cilantro
salt and pepper to taste
1 ½ c. Monterey jack cheese
Heat oil in a large pot. Saute onions 6-8 minutes. Do not brown. Add garlic and cook an additional 2 minutes. Add tomatoes, chile, chicken broth and chicken, black beans and spices. Bring to a boil and lower heat to simmer 10 minutes.
To serve, place tortilla chips in bowl, add cheese, and por soup over them.
Serves 5-6 as a main course. Can add additional broth and garnish with cilantro, avacado, and sour cream.
Vegan Version: substitute vegetable broth for chicken broth, add extra beans in place of chicken.
